Question for serious meat smokers....and boy do I mean serious!!!!?
Question: I have been smoking meat for years, but never once tried to save the meat using a technique of smoking of any kind.
Answer: I do not want any kind of oak. leave the meat tasting like food worm. Use hickory, mesquite, cherry or apple. (Depending on the meat.)
If you have any gamey meats such as goat, antelope or Bambi, I take pleasure in Mesquite. It gives the meat taste better.
